Recipe of the Week

Nacho Cheese Pasta & Meatballs

Ingredients:

1 package Diet Center Nacho Cheese Pasta
1 can low sodium-canned tomatoes
3 oz turkey meatballs (lean/ reduced fat)
paprika
chili powder
garlic powder
onion powder
dried parsley
ground pepper
1 tsp chopped garlic
1 tsp fat free parmesan cheese



Directions:

Cook Diet Center Nacho Cheese Pasta as directed on box.

In medium skillet, simmer meatballs in low sodium canned tomatoes and add all seasonings until done.

Serve over bed of pasta and enjoy!

* Serve with salad if desired

Recipe of the Week

Hearty Beef Stew
 
Ingredients:

1 Diet Center Sloppy Joe
4 oz Beef Stew Meat
3 Small Redskin Potatoes Chopped
6 Baby Carrots
¼ Cup Chopped Celery
¼ Cup Onions
½ Cup Low Sodium Beef Broth
½ Can Low Sodium Diced Tomatoes with Garlic and Basil
1 Teaspoon Corn Starch mixed with 3 teaspoons of water
1 Tablespoon Chopped Garlic
1 Tablespoon Vegetable Oil
Chili Flakes
Onion Powder
Salt Free Steak Seasoning


Directions:

Sauté stew meat with chopped garlic, onions, celery, carrots and chopped potatoes. When vegetables are still crisp add beef broth and cornstarch mixture in crock-pot.  Add remaining ingredients and simmer on low for 4-6 hours.

Recipe of the Week

Shrimp Fettuccini Alfredo



Ingredients:

1 Package of Diet Center Fettuccini Alfredo®

 6 oz Shrimp

½ cup cooked Broccoli

½ cup cooked Mushrooms

1 Tsp Vegetable Oil

2 Cloves Garlic – chopped

Cracked Black Pepper

Onion Powder

Chili Powder

Dried Parsley

Red Pepper Flakes

1 Tbsp Fat-Free Parmesan Cheese


Directions:

Cook Diet Center Fettuccini Alfredo® as directed on box

In medium skillet medium-high heat, add vegetable oil then garlic.

Then add shrimp and add seasonings until done then set-aside.

Cook vegetables with seasonings until done.

Spread vegetables and shrimp over bed of Diet Center Fettuccini Alfredo®

Top with green scallions and sprinkle parmesan cheese

Leigh Ann was born in Wilson, NC.  Leaving Wilson after she graduated high school, she attended UNC Wilmington receiving a B.S in Psychology.  She spent some time in Atlanta, GA but returned back to her home roots.  Leigh Ann enjoys running, spending quality time with family and friends and going to the beach!

Nikki was born in Rochester Hills, Michigan.  She graduated with Cum Laude B.S. in Education from Eastern Michigan University.  Nikki has a wide range of experience from educating students to working in the business administration field.  She spent the past 12 years in Southern California.  She enjoys to travel and play tennis. Nikki is our go-to girl when it comes to experimenting with new creative, healthy recipe choices.

Dao was born in Newington, Connecticut. She moved down to North Carolina five years ago where she graduated from Barton College with a B.S. in Sports Medicine. Dao enjoys shopping, cooking, being outdoors and watching sports!

Chocolate Covered Strawberries

 

1 Package of Chocolate Gold Premium Protein Supplement
4 ounces of Water
1 ½ cups Whole Small Strawberries

Mix Chocolate Gold Premium Protein Supplement as a pudding according to directions on the package.
Dip fresh strawberries until covered with pudding mix. Place on wax paper. Freeze. Enjoy!

How to stay motivated to work out after Summer is over!
Stay Motivated During Winter Exercise

You have worked all year to get in shape. ‘It could have been a New Year’s resolution that got you started. ‘When winter hits, the weather gets cold and gloomy. ‘Learn to ignore the gloom and doom and stay on track to better health.
During the warmer weather, it is easy to get physical activity. ‘We work in the garden, go for walks in the evening, bike ride with the family, and spend lots of time outdoors.  When someone wants to go, we jump up and go. ‘There seems to be more energy in our steps.

The main motivation is looking good in great clothes. ‘There’s nothing wrong with that. ‘We all want to look our best for as long as we can. ‘The by-product of looking good is that we can achieve great health benefits. ‘Unfortunately, when winter rolls around, all we desire is to curl up on the couch in big sweaters and slippers. ‘It’s not cute but it’s comfortable.

Here are a few tips to help you stay motivated during the winter months. ‘To start, set a regular time to work out and stick to it. ‘You may not feel like meeting a friend at the gym for a class but you can pop in a DVD or VHS tape and sweat at home. ‘Instead of cranking up the car and braving the cold, you stayed comfortable and worked out anyway.

Talk to a friend or workout buddy even if you can’t get to the gym with them each day.  ‘When the weather leads you to slouch on the couch, phone a friend and get a pep talk until you jump up on your feet and get going.
